Fantastic exploration of how regional dishes escape their origin stories. The tension between what King Ranch heirs want associated with their name versus what ordinary South Texans actualy crave is the whole Tex-Mex story in miniature. I grew up near folks who'd never set foot on fancy ranches but made versions of this weekly with whatever protein was on sale. That gap between bougie branding and church potluck reality gets at somethign deeper about who owns culinary identity.
